In the summer of 2008, the NRAEF will be offering two Summer Institute Spotlight Series. In order to be eligible to attend the Spotlight Series, all attendees must be completers of Levels I, II and III. Each Spotlight Series session is created by a college or university that has previously hosted a Basic, Advanced or Mastery Level Summer Institute. The partner site develops the curriculum and supporting materials.

The Culinary Institute of America at Greystone will offer its first Spotlight Series. Attendees will be trained in ethnic flavor profiles, pairing herbs and spices, how different cooking techniques impact flavor, and infusions and emulsifications.
