The National Restaurant Association Educational Foundation's International Food Safety Council is an awareness program that was formed in 1993. The Council promotes industry-wide food safety education at all levels as our industry's most effective way to prevent foodborne illness.

Certified professionals representing all segments of the restaurant and foodservice industry support the awareness program—from students and instructors to restaurant owners and managers. The Council is also privileged to have the voices of foodservice suppliers, equipment manufacturers, distributors, and associations offering food safety solutions to our industry professionals.

Our Mission
The mission of the Foundation's International Food Safety Council is to heighten awareness of the importance of food safety education by:
  • Advocating and facilitating food safety improvement
  • Encouraging industry-wide food safety education
  • Facilitating dialogue between all segments of the restaurant and foodservice industry
  • Researching ways to provide the industry with cutting-edge food safety solutions
  • Educating our industry professionals to handle and prepare food safely is a top priority. Through the Foundation's ServSafe
    ® training and certification program, we have certified more than one million managers and trained millions of employees. Our industry serves more than 50 billion meals each year—it's a large responsibility and we take it seriously.

    Our Initiatives
    Building Awareness
    The Foundation's International Food Safety Council strives to build the public's understanding of the industry's high training standards and our commitment to serving safe food. The annual culmination of these efforts is National Food Safety Education Month, held each September. Working with restaurants and foodservice operations, hospitality associations, colleges, universities, state and local health departments and USDA extension agents across the country, millions of people participate in National Food Safety Education month annually.

    Best Practices
    As of February 1, 2001, Best Practices will become Food Safety Report. Each quarterly issue will continue to focus on how to enhance food safety in a variety of situations through case studies, food safety tips and updates from the industry's top food safety experts.
